Vegan Ratitoullie


My boys have been begging me for Ratitoullie because of Disney’s movie. It was a hit! Everyone liked it, in fact we didn’t have leftovers.


1 medium yellow squash, sliced
1 medium zucchini, sliced
1 small eggplant, sliced
1 small red onion, sliced
1 cup of spaghetti sauce
1 tbsp dried thyme leaves
1 tbsp dried sage leaves
2 tbsp Bacon Flavored Oil or any oil of your choice
2 tbsp vegan cheese (optional)


1. Arrange the squash, zucchini and eggplant in a circle. Rotating veggies as you go. Season with salt and pepper.

2. Pour Spaghetti sauce in the middle of the circle and cover with onions. Top with herbs and oil.

3. Bake 350 for 25 minutes. Top with vegan cheese if desired and bake for 5 more minutes until slightly melted. Enjoy!
